Five days till Christmas! Wow. Seriously, just wow. I can't believe that it's already that time of the year! It's only as if Christmas last year just passed by and in only a few more days, we're already celebrating Christmas 2016.
I'm sure that many of you, just like myself, are huslin' and bustlin'. This season, is the most fun and meaningful time for everyone, but it's also the busiest and can be the most stressful if not put into perspective.
Now, I am not usually the one to be in the kitchen preparing food and cooking meals during the holidays. Maybe that will change when I get married, ha! My mom is an awesome cook and I'm marrying a wonderful cook as well! If you remember, my fiancé helped me with my Food, Fashion, and Football back in October.
For this post, I've asked my mom to help me out with a few dishes made with La Vaquita Cheese. I know how stressful it can be sometimes to think of recipes that your family and friends will love so here's a little something-something for you!
Just a little background on La Vaquita Cheese, the brand that we used on the dishes. La Vaquita Cheese has a humble beginning in the Houston home of its founder, back in 1971. It's became famous for its authenticity and quality and word has spread since then.
La Vaquita Cheese is fairly easy to find. They are available in most local grocery stores. We got ours at Walmart. La Vaquita comes in different kinds that you can use for any kind of dish.
While I'm not a cook, I know that cheese can add delicious yet subtle flavor in dishes and sometimes, as simple as putting in cheese in a dish, can make it savory!
On this post, we have prepared 3 simple dishes: Baked Chicken Pesto, Bacon-Wrapped Jalapeño, and Greek Salad
Baked Chicken Pesto Recipe
Baked chicken pesto will make a great entreé!
INGREDIENTS:
Chicken Breast
Basil Pesto (We got the Kirland brand from Costco but any brand will do)
Roma Tomatoes
La Vaquita Melting Cheese
HOW TO COOK:
Top chicken breast with Basil pesto, tomato and La Vaquita melting cheese. Bake at 400 for 40 minutes
Bacon-Wrapped Jalapeño
Bacon-Wrapped Jalapeño is a great appetizer. Normally, what's use for the stuffing is a cream cheese. For this dish, we substituted it with La Vaquita Sour Cream and it tasted just as delicious!
INGREDIENTS:
Jalapeno
Bacon
La Vaquita Sour Cream
HOW TO COOK:
Slice jalapeno into halves, stuff with La Vaquita Sour Cream and and wrap jalapeno with bacon. Bake at 350 for 30 minutes or until the bacon turns crispy
Greek Salad
Greek Salad is a great side to add to any festivities! While normally feta cheese is used, for this particular recipe, we used La Vaquita Fresh Cheese instead.
INGREDIENTS:
Romaine lettuce
Cucumber
Sweet grapes tomato
Red onion
Kalamata olives
Lemon
Olive oil
La Vaquita Fresh Cheese
HOW TO PREPARE:
For the salad, mix the vegetable in a bowl squeeze lemon, add olive oil and top with La Vaquita Fresh Cheese
